fruit yakitori with lime syrup
a bittersweet treat for summer
you need
- 100ml (3 1/2fl oz) water
- 110g (4oz) white sugar
- juice and zest of 2 limes
- 1/2 pineapple, cut into 2.5cm (1in) chunks
- 2 bananas, cut into 4cm (1 1/2in) pieces
- 3 kiwi fruit, peeled and quartered
- 4 bamboo skewers, soaked in cold water for 2 hours
instructions
put the water, half the sugar, the lime juice and zest in a small pan. bring to the boil, lower the heat and simmer gently for 10-15 minutes or until thick and syrupy
thread the fruit on to the skewers . scatter over the remaining sugar evenly. heat a griddle or grill and cook until the fruit is golden and slightly charred. turning occasionally. drizzle with the lime syrup
